I have a confession to make. Val and I made a boo boo. We said we cooked a pig stuffed with congri, but really, what we stuffed it with was moros ("Moors"). Congri is made with red beans, and moros is made with black beans.
The pig was so great, I have to write up the recipe. But I have no idea how to make moros. So I'm doing research today. I'm about to go to the damn store. Again.
I've seen some good recipes online, but they don't contain pork, so that has to be fixed. The pork would be taken out before putting it in the pig, and the pig will give some pork flavor, but I want the moros to have a good head start.
Okay, let me draw up a list.
I'm trying to get Val to get his mom's recipe. It's only fair, since I give them mine!
