What Hump?

I'm experimenting out in the Hoginator today.

Instead of the usual beer-butt chicken made with a roaster, I bought a fryer, cut it in halves, and injected each half with something different. One half got beer, salt, and garlic, with a little habanero Tabasco. The other half got naranja agria, salt, Jack Daniel's, and habanero Tabasco. I also injected the beer mixture into a couple of turkey wings. I smeared everything with a coating of lard, bacon grease, salt, and pepper, and now I'm smoking the whole mess over hickory chunks.

I like beer-butt roasters, but because they're so big, they don't have much surface area for their size, so a lot of the benefit of smoking is lost. I figured split fryers might be better.

I'm also fooling around with shrimp. Cajun angels are fine, but a little variety wouldn't be a bad thing. I bought some big shrimp, red bell peppers, jalapenos, small boiling onions, and fresh pineapple. I'm going to make a paste from pineapple and jalapenos, add paprika to make it pretty, soak the shrimp in it, and throw it on the grill. I'm concerned that the shrimp will burn and the other stuff will be raw, but you you never learn anything unless you try.
